Pliers, heavy-duty metals, and wood saws are not a common sight in a typical bakery.

 But then Gorvey Henry is not a typical baker.

On a recent Friday, the East End resident, who specialises in creating elaborate novelty cakes, abandoned the comfort an air-conditioned room with cake mixers, flour and other ingredients.
Outside, he used an electric saw to cut pieces of wood for the base of a rocket-shaped cake. The edible sculpture would later be auctioned at a Cedar International School fundraising gala.

“I mean, which baker doesn’t have pliers and hacksaw in their bakery?” Mr. Henry asked with a chuckle.

After cutting circular shapes of wood, he moved back inside, where an iPad shuffled music from various genres, including songs by Adele and Beyonce.

“The process is quite intense,” Mr. Henry said as he stacked the layers of cake to form an oval shape. “I always try to use a printed photo as my guide.”

The pastry chef has carved cakes in the shape of designer handbags, shoes, plants and other forms. His work has sold for as much as $3,500.
