Students at H. Lavity Stoutt Community College may soon have more opportunities for training in the culinary field, as the college ramps up plans to offer expanded programmes starting next year. 

The college is working to rebuild its culinary course offerings and is designing a curriculum for a full-time course of study that could start next fall, Neil Cline, the college’s director of culinary education, said Monday.

The curriculum still needs to be formally approved by the college’s cabinet and board of directors, but may include subjects such as meat and seafood identification, food safety, knife handling, cold food preparation, and the historical and cultural dimensions of food, as well as traditional academic fare such as math, English and a foreign language. Mr. Cline said.

He added that he has noticed an industry demand for versatile culinary workers who can be “chef/managers.”
