Jerome Joseph tries to live every day by the credo of the ancient Greek physician Hippocrates.

“Let your food be your medicine, and your medicine your food,” the physician, long considered the father of modern medicine, is believed to have said.

Mr. Joseph, a vegan for six years, tries to eat by those words too.

On a recent Tuesday morning, the charter captain stood in front of an electric stove in his Fat Hogs Bay apartment scrambling chunks of tofu in a pan. It’s his usual breakfast, along with hash browns and flatbread.

“I realised that all the stuff I was eating wasn’t good for me,” he said as he sprinkled some soy sauce over the scrambled tofu.

Like all vegans, Mr. Joseph maintains a strictly plant-based diet and steers clear of consuming animal products, including dairy. To him, it’s not as limiting as it sounds.

“A lot of people think being vegan is boring until they get the chance to sample different vegan meals,” he said.
