A tasty Virgin Islands patty starts with well-seasoned dough and seasoning, according to Sesilee Thomas.

“My thing is, the dough must taste good, and then you will have a good bite,” Ms. Thomas said on Friday during the Senior Citizens Fish Fry and Market Day at the Road Town Senior Citizens Centre.

The East End resident was among about 50 seniors at the event, which was one of several activities held in observance of Senior Citizens Month.

“This reminds me of the old-time days,” Ms. Thomas said as she rolled dough with a rolling pin. “The market days used to be days when the people brought their produce and baked goods to the market to sell.”

And that was exactly what organisers wanted to re-create, said DarileLettsome, a manager of the Road Town centre.

“I told them to dress like they used to in the past, and one showed up in her hat and ensemble: a hat and a wrapper around her skirt,” Ms. Lettsome said.
